About the Chef
Hailing from the province of Isabela, Executive Chef Gerwin Bailon boasts more than 10 years of culinary expertise, starting from the humble kitchen of his grandmother since he was a kid. Through his unparalleled dedication and passion, he took a leap overseas, training from different master chefs from different international hotel chains in Middle East. He focused on being a jack of trades and dedicated to learn the art of international cuisine. After years of extensive experience, he made his way back to the Philippines in 2014, and took the helm of Discovery Suites and Discovery Country Suites as Executive Chef.
About the Sommelier
With over 12 years of experience in the beverage industry, it has always been Gio’s passion to change the way people perceive drinks and refreshments. In 2016 he joined the Philippine Sommelier Competition which inspired him to further expand his knowledge in the beverage industry, specifically for wines. It was also in the same year where he got his Wine and Spirits Education Trust (WSET) Level 2 Award with Wines and Spirits. Currently, he is Discovery Suites’ Assistant Food and Beverage Manager , and Resident Sommelier, still doing what he does best—a storytelling through beverages.
Tasting Notes
The duo came up with the following featured pairings: Sous Vide Octopus paired with Parker Coonawarra Estate ‘Favorite Son’ Chardonnay; Black Bean Soup paired with Parker Coonawarra Aromatics Chardonnay Pan Roasted Mahi Mahi paired with Parker Coonawarra Estate ‘Favorite Son’ Cabernet Sauvignon; and Braised Short Ribs paired with Parker Coonawarra Estate ‘Interloper’ Cabernet Malbec.
It was teamwork coupled with culinary creativity that gave 22 Prime its latest dining innovation. Together, Chef Gerwin and Gio bring a whole new meaning for special occasions with their Tasting Notes.
Tasting notes is now available at 22 Prime from 11:00 AM to 11:00 PM for a minimum of 10 persons. Prices start at PHP 2,500 nett for degustation, and PHP 3,500 nett for degustation and wine pairing. Prior reservation is required.
